- 1 medium HEAD BOSTON BIBB LETTUCE
- 1 medium HEAD RADICCHIO
- ¼ cup RASPBERRY VINEGAR
- ¼ cup CORN OIL
- ½ medium RED BELL PEPPER, diced
Wash Bibb lettuce and radicchio in ice water and drain thoroughly. Hold radicchio leaves together and slices into thin strips. Prepare the raspberry dressing by combining raspberry vinegar and corn oil in a small bowl; whisk thoroughly to combine. Place Bibb leaves on two salad plates and, in the middle of the lettuce, place the shredded radicchio in neat piles.

- 1 pinch PAPRIKA, as needed
- ½ cup HONEY-MUSTARD POPPY SEED DRESSING
Cut hearts of palm lengthwise into strips. Place half of washed and cut Bibb lettuce on serving plates. Arrange hearts of palm, stacked against each other in different directions. Add olives and red peppers. Top with chopped parsley.

- Lemon Dressing
- ¼ cup CORN OIL

- 2 ounces ARUGULA LEAVES
- ½ head RADICCHIO
- ½ head BELGIAN ENDIVE
- 1 medium VINE-RIPENED TOMATO
- ¼ cup SLICED BLACK OLIVES
Lemon Dressing: In a medium mixing bowl, combine corn oil, lemon juice, grated peel, sugar, salt, and pepper. Whisk together and let sit in the refrigerator for two hours.
Remove stems from arugula and wash thoroughly. Cut Belgian endive half an inch from stem and place four leaves on cold salad plates with tips facing outward. Next, pick four leaves of radicchio and place two on each salad plate, forming a bowl in the middle of the endive. Place arugula in the midst of radicchio bowls, flowing out slightly. Dice tomato and sprinkle on top of lettuce.
Embellish with sliced black olives. Drizzle a quarter of the lemon dressing on top of salads when ready to serve. Serve extra dressing on the side. Snuggle up with your lover and enjoy your delicious meal.
